Happy Thanksgiving...Sweet potatoes

If you are like me and don't particularly like sweet potatoes
this recipe will change your mind.
I grew up with the common Thanksgiving Day dish of sweet potatoes covered in marshmellows and other than eating a few mellows of the top I never did care for them.
Then I had this dish at a friends house. Yum!
This recipe calls for baking whole sweet potatoes first but I have cheated in the past and used canned ones and it was just as good. If you use canned ones make sure you drain them well.

So give this a try-you'll love them and so will the kids.

Special Sweet Potato Casserole

4 cups mashed sweet potatoes
Butter or margerine
2 tablespoons Granulated sugar
2 each Eggs -- beaten
1/2 cup Milk
1/3 cup Pecans -- chopped
1/3 cup Packed brown sugar
2 tablespoons Flour


Mix the sweet potatoes, 1/3 C butter and the granulated sugar. Beat in the eggs and milk. Pour into a greased 2 qt casserole. Combine the pecans, brown sugar and flour. Stir in 2 tablespoons of melted butter.
Sprinkle the mixture over the sweet potatoes and bake at 325 for 1 hour.

I have never had them the marshamallow style...but have never liked them any way. Though I *DO* really like sweet potato pie (in small doses as its very rich!) that I was introduced to since i moved southward. Maybe a better recipe is the answer!
 
i think i may have to have my own thanksgiving feast over here in the Uk in honour of my overseas friends - it all sounds sooooo good (i LOVE sweet potatoes...well pretty much most holiday related foods!)

I was never a fan of the whole marshmellow recipe... but when I found this recipe, which is very similar to yours, Marie, I fell in love.
Mmmm getting hungry just thinking about it!

<i>Praline Yams

1 (29 ounce) can Princella or Sugary Sam
cut yams, drained
1/4 cup chopped pecans
1/4 cup coconut
1/4 cup firmly packed brown sugar
2 tablespoons flour
2 tablespoons butter or margarine, melted

Preheat oven to 350 degrees F. Place yams in an ungreased 1 1/2-quart baking dish.

In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams. Bake for 20 to 30 minutes or until bubbly.

Makes 6 servings.</i>

And... I must admit... I just got this recipe off the back of the Princella canned yams!!
It's SO good that my sister is making this year just so she can make extra and keep a pan for herself (which is what I usually do, too)
 
Very Lazy last minute peanut butter cookies.

1 egg
1 cup of peanut butter
1 cup of sugar

Mix it together. Place dollops of the mixture on a cookie sheet. Bake at 350 degrees. Optional: use honey roasted peanut butter for a different taste.

That's it!

No, I am not kidding! I bet Gwyn could even do it herself its so easy.

I am the queen of complicating and ruining complicated recipes, but this one i can do. My husband's friend made these growing up and my husband told me and I didn't believe him either. In fact i made them a few days ago. Depending on how big you make the cookies,,,,anywhere between 5 and 12 cookies it males - just enough so you can eat them for a day or two without having 2 dozen leftover that go bad.
