OT: Pumpkin innards

I have a pumpkin this year.

My mother used to roast the pumpkin seeds and I wanted to do it this year. But does anyone have any ideas on what to do with the innards?

I hear the little pumpkins are the ones you want for pumpkin pie, not the big ones.

Pumpkin bars, anyone??

I use mine for compost. Frankly the smell of roasting pumpkin seeds makes me lose my appetite for pumpkin seeds by the time they are done! I believe pie pumpkins are not just small pumpkins but an actual different variety of pumpkin bred for making pumpkin puree for cooking. The jack-o-lantern pumpkins are not bred for flavour or colour of flesh, just size. So you can buy a small jack-o-lantern pumpkin that is much milder in flavour and colour than a pie pumpkin. You also pay a premium for pie pumpkin over jack-o-lantern pumpkins.
 
It ain't too big, but oh that's crappy. I guess compost it is.

I bet those hybrid white pumpkins i saw at the store are even less flavorless
 
If you want to roast seeds, get the big honkin' pumpkins...those ones that you would carve as a kid.
Cut open the top and rip out all the guts and put them in a bowl. Then go through the guts and put all the seeds in a colander. When you have the parts all separated, rinse the seeds a bit and drain.
Put the seeds on a sheet pan with sides and spread them out. Give them a good dose of salt, or seasoned salt and swish them around to coat.
Then, toast them under the broiler until they are golden...jostle them around every so often for even toasting.
Take them out before they burn (yes, from experience).
