Thanksgiving Leftovers?? Try Bubble & Squeak!

I had never heard of Bubble & Squeak until I saw it on the Food Network some time ago. I'm sure some of our British members have heard of it!

Combine leftover mashed potatoes, stuffing, cubed turkey and a bit of gravy. Make patties with the mixture and fry up in a bit of oil. Serve with warm gravy poured on top.

My kids gobble this up every year! You can also make a vegetable puree to pour on top but we prefer the gravy.

British bubble and squeak is usually mashed potatoes and cabbage - that's it!

The US version sounds much more deluxe! :)

Yes, I'm sure its infinitely adaptable - all you need really is the leftover mashed potato as a base. That's the guiding principal!

Of course, there will be UK purists who insist on the boiled or steamed cabbage too - and I must admit that that's my preference too - and its not just because that's what supplies the 'squeak' in its name!

I love the humble, British original which somehow manages to be tasty with very modest leftovers. It was the kind of economical meal that my family depended on.

Make sure you cook it well so it has lots of crusty brown bits!
